Mango Dal In Clay Pot

 Hai friends today I am coming with yummy and tasty recipe called "Mango Dal in Clay pot". The dals in the clay pot tastes yummy.  

Cooking dal directly in the clay pot takes 40 minutes to cook. It takes more time . We have to soak the dal for 3 hours ,Then have to cook in the clay pot.

The clay pot has to be seasoned well before 1st use. We have to take little care to the clay pots.

Soon will post how to clean and season the clay pots.



Lets go to the recipe


Ingredients:

Moong dal-1/2 cup

Toor dal/Kandi pappu-1/2 cup

Mango -1(2 cups)

Green chillies-6 to 7

Onion -1

Curry leaves few

Coriander-handsfull

Turmeric little pinch

Salt to taste

Oil-2 tsp

Mustard seeds-1/2 tsp

Jeera -1/2 tsp

Dry red chillies -few

Garlic pieces-4 tsps.

Water -7 cups

Preparation:

Clean the dals well with water. Drain the water  and add again fresh water  .Soak it for 3 to 4 hours or over night.

Method:

Add the soaked dals in the clay pot 

Add 4 cups of water and turmeric

Now on the heat

It takes 40 minutes  to cook the dal

When the water starts to boil mix it ones and low the heat

Use wooden spatula only(No metal)

Now place the wooden spatula on the pot

Keep stiring with laddle in time to time without sticking to sides and bottom

After 35 minutes the dal cooked. Add the chopped mango  pieces, slit green chillies, sliced onions,  in 

the pot and cook well

Add some more water to the daal. The water is absorbed and daal will cook

Add salt and little more water. Mix it well

Add little turmeric and mix well

Now the dal cooked well. Off the heat and keep aside

Take small pan add oil and heat it Add chopped garlic and fry it

Add the mustard seeds ,jeera , dry red chili pieces and curry leaves fry it.

Add the seasoning to the dal, Mix well

Finally add the chopped coriander(Sorry for the messy pot)

Now the dal is ready. Serve it hot with hot steamed rice.

Mutton Mandi

 Hai friends today I am coming with yummy tasty recipe called "Mutton Mandi". This is very tasty and yummy biryani. This has unique ingredients. It gives unique flavours.  I really love the taste and flavour. I followed few recipes and tried . 

In this I used dry lemon. That we can make at home . Cut it into half squeeze the juice and keep the lemon in oven and cook for  2 minutes. It will get dry.




Ok lets go the recipe

Ingredients:

Masala:

Green cardamom-3

Cinnamon stick-2 

Cloves-6 

Cumin seed-1tso

Pepper corn-1/2 tsp

Dry Ginger -Small piece

Coriander seeds-2 tbsp.

Ja patri little

Nutmeg small piece

Fennel Seeds-1/2 tsp

Dry lemon small piece

Dry red chillies-4


Marination:

Mutton-2 lbs

Mandi Masala

Salt

Turmeric

Green chilli paste-5-6

Lemon juice-1piece

Saffron water-1/8 cup


Main cooking:

Basmati rice:2 cups

Oil-1/2cup

Bayleaf-2

Cardamom-2

Cloves-3

Cinnamon-1inch

Onions-2

Tomatoes-2

Green chilles-4

Preparation:

Take the spices as shown here(Forgot to show dry ginger here)

Add in the jar and blend to the powder

Here you Mandi Masala is ready

Take 2 lbs mutton. Take 4 tsp mandi masala  add turmeric , salt, lemon juice, oil , little soaked saffron 

and little water  mix it well

Add mutton and mix it well. Marinate for atleast 4 hours or overnight.


Method:

Place  cooker add oil ,ghee and heat it. When it gets heat add spices 

To this add chopped onions , chillies and turmeric fry for 3 to 4 minutes

When tomatoes are cooked add marinated mutton and fry for 2 minutes

Add salt and mix it well

Add 2 cups of water

Pressure cook for 6 to 7 whistles

Now the mutton is ready

Now take the big mutton pieces for the fry . keep this aside

Soak the basmathi rice for 30 minutes

Now add the basmati rice to the  mutton gravy. Mix it well

Now add 2 cups of water and salt(Mutton gravy is approximately 2 cups)

Add 1 tsp mundi masala too

Add coriander cook this till the rice cooked well in low heat

Fry the Mutton pieces

Add 1 tsp crushed  green chillies or paste

Add mandi masala too  Add Kashmiri chilli powder

Add little salt too Fry for 1 minutes

Add the mutton pieces and fry for 3 to 4 minutes

Now fry is ready

Fry cashew pieces in the ghee and keep this aside

Now the rice is ready

Add fried mutton pieces on the top

Add fried cashew ,soaked saffron and chopped coriander   too

Cover it and cook for 2 to 3 minutes in low flame(Here can use the coal smoke)

Now Mutton Mandi  is ready

Bendakaya Roti Pacchadi/Lady's Finger Chutney/Okra Chutney

 Hai friends today I am coming with yummy tasty recipe called "Bendakaya Pacchadi".This is very easy and tasty recipe. Few months back I didn't know we do pacchadi with bendakaya. When I saw the recipe i was surprised and saw few more recipes. Later I changed few ingredients and tried it. It came so good. This goes nice with hot steamed rice. Ok lets go the recipe




Ingredients:

Bendakayalu-10 to 15

Tomato-1

Green chillies-5

Dry red chillies-3

Garlic-3 cloves

Salt to taste

Tamarind-little

Mustard seeds-1/2 tsp

Jeera-1/2 tsp

Curry leaves-few

Oil-2 tsp

Preparations:

Clean well and dry the bendakayalu.

Cut it into small pieces as shown here.


Method:

Place the pan heat it and add oil

When the oil gets heat add the green chillies and dry red chillies and fry it.

Now the both chillies are fried well. Keep this aside

Now in the same pan add the chopped garlic.

Now the garlic is fried well. Transfer to another bowl.

Now in the same add cut bendakayalu. Fry till it roasted well

Add chopped tomatoes and fry all the water evaporates(We can add onions too)

It takes 3 to 4 minutes to cook. Now the bendakayalu and tomato are cooked well

Now add the roasted chillies and garlic in the mortar and pestle

Add tamarind and Mash it as shown here

Now add cooked tomato and bendakyalu and mash it well.

When it is crushed well add salt too.Mash it well.

Now the roti pacchadi is ready. Transfer to the bowl

Place the small pan add oil and heat it. When oil gets heat add the mustard seeds, jeera and curry leaves

Now the seasoning is ready. Add to the pacchadi.

Now the roti Pacchadi ready to eat with hot steamed rice.
