UppuChepa Vankaya Koora(Salted Fish and Brinjal Curry)

 Hai friends today I am coming with tasty and interesting recipe. This is called Uppuchepa Vankaya 

Koora.  Uppu chepa is called as Salted fish. In India we used to cook this curry with dry salted fish.

That tastes yummy. Those who eat those dry fish , shrimp they will enjoy these curries. This can be cook 

with the  brinjal or ridgegourd.  

Now its tough to bring dry fish to USA. But don't worry now we can get salted fish and dry  fish  here.

 We get variety of salted fishes here. Ok lets go the recipe



Ingredients:

Salted fish- 10 pieces

Brinjal-6 small

Onions- big 1 onion

Salt to taste

Chilli powder to taste

Turmeric

Oil-2 tsp

Preparations:  Cut the fish into pieces as shown in the video.

Cut the onion into small pieces.

Cut the brinjal into length wise pieces.

Method:

Place the pan add oil and heat it.

 When it gets heat add the onion pieces and fry until light brown.

When the onion gets cooked add the salt and chilli powder. Mix well and cook for 1 minute.

Add the brinjal pieces and mix well. All the masala should covered well to the brinjal.

Now add the water and curry leaves cover it and make it boil.

 When the water boils well now add the fish pieces . Cover and cook for 3 to 5 minutes.

Later both fish and brinjal cooked well.

Off the heat. 

Serve this with hot steamed rice or Rasam Rice.

Sorakaya Thokka Fry/Bottle Gourd/Louki Peel Fry

 Hai friends today I am coming with simple and easy recipe called "Sorakaya Peel Fry". This is very easy and tasty recipe. We always do chutney with this peel. We can do fry also. Adding more garlic gives nice taste. This goes nice with rice  and roti. I enjoyed with both. Next time dont trash the peel. Do this fry You will love it. Ok lets go the recipe





Ingredients:


Sorakaya/Bottle Gourd Peel-2 cups

Garlic-4 cloves

Mustard seeds-1/2 tsp

Jeera-1/2 tsp

Dry red chillies- few

Curry Leaves- few

Salt to taste

Oil-1 tsp


Collect the peel and clean well and keep it aside

Chop it as shown here

Place the pan add oil and heat it. When it gets heat add the chopped garlic.

When garlic turns light brown add the mustard seeds , jeera ,dry red chillies and curry leaves

After 1 minute add the chopped sorakaya peel and mix it well. Then add half cup water and required amount of salt

Cover it and cook for 3 minutes

Cook till the water evaporates

Now curry is ready to serve with hot steamed rice

Bhaji in Instant Pot

 Hai friends today I am coming with easy and tasty recipe called "Bhaji in Instant Pot". This is very simple and easy to prepare. Now Instant pot made our work easy. It is very handy too. Everyday i use Instant pot. I tried many recipes in it. Today i am coming one among the recipes .Here is the recipe



 


Ingredients:

Potatoes-2

Cauliflower Florets-1 cup

Carrot-2

Green peas-1 cup

Onion-1(big)

Capsicum-1

Tomatoes-2

Jeera-1/2 tsp

Ginger garlic paste-2 tsp

Salt to taste

Pavbhaji masala-2 tsp

Coriander(chopped)-Handsfull

Butter-3 tsp

Food colour -little(optional)

Lemon slices

Preparations:

Cut the All the veggies and keep it aside.

Method:

Switch on the Instant Pot and select the saute mode.

Add the butter and heat it.

When the butter melts add the onions and fry it. Add the jeera and turmeric. Mix it well

When the onions are transparent  add the ginger garlic paste and fry it till the raw smell goes

Add  all the chopped veggies and mix it well

Add chopped tomatoes and mix it well

Add the Pav bhaji Masala, Salt, Kashmiri chilli powder mix it well and f then add required amount of water

Now close the lid and close the vent. Select manual mode and keep timer for 20

After 20 minutes open the lid

Now mash it well with masher or hand blender

Finally add the chopped coriander and butter

Serve it hot with Hot hot Pav.

Sorakaya Curry in Instant Pot under 10 minutes

 Hai friends today I am coming with yummy and tasty recipe called "Sorakaya Curry". This is very easy and tasty curry. This can be done in IP under 10 minutes. This goes nice with rice and chapathi.  We can cook this recipe in different masala but today i am coming with one amomng the recipes. Ok lets go the recipe




Ingredients:

Sorakaya/Bottle gourd-1

Onion-1

Salt to taste

Sambar Powder-1 tsp

Curry leaves few

Oil-1 tsp

Mustard seeds-1/2 tsp

Jeera-1/2 tsp

Turmeric-Little pinch

Chopped Coriander-Handsful


Preprations:

Peel the skin and cut into chunks or chop it.

Method:

Turn on IP in saute mode .Add oil and heat it.

Add mustard seeds and jeera

Add turmeric and chopped onions fry for 2 minutes

Now add the chopped sorakya mix it well

Add salt and sambar powder. Mix it well

Add curry leaves and  half cup water

Close the lid and cook in manual for 5 minutes

After pressure releases open the lid

Finally add the chopped coriander

Serve it hot with Hot steamed rice or Chapathi.

Mushroom Cashew Masala(Restuarant style)

 Hai friends today I am coming with yummy and tasty recipe called "Mushroom Cashew Masala".

This is very simple and tasty recipe. This goes nice with rice , biryani, chapathi , naan. We really enjoyed 

with both pulav and naan . I this recipe i dint add the cream. Adding cream gives nice taste to the dish. Ok 

lets go the recipe






Ingredients:


Mushrooms-1 pack(! lb)

Onion-1

Salt to taste

Kashmiri chilli powder-1 to 2 tsp

Lemon juice-1 tsp

Coriander leaves handsfull

Butter-1 tsp

Cashew-1/4th cup

Garam masala-1/2 tsp

Coriander powder-1/2 tsp


For masala


Tomatoes-2

Green chillies-2

Elachi-2

Cloves-4

Cinnamon-1 small stick

Peppercorns-1/2 tsp

Garlic cloves-2

Ginger-small 2 pieces

Curd-1/4th cup

Cashew soaked-1/4th cup


Procedure:

Here are the list for masala

Tomatoes-2

Green chillies-2

Elachi-2

Cloves-4

Cinnamon-1 small stick

Peppercorns-1/2 tsp

Garlic cloves-2

Ginger-small 2 pieces

Curd-1/4th cup

Cashew soaked-1/4th cup

Add one by one and grind to smooth paste. Now masala is ready. Keep it aside


Method:

Place the add oil and heat it.

When oil gets heat add the mushroom chunks and cook until half cooked

Add the cashew and fry for 1 minute or golden brown.

Now the mushrooms are half cooked and cashew also cooked. Keep this aside

Place another pan  add oil and heat it. When oil gets heat add half tsp jeera

When jeera pops soon add the chopped onions . Fry until transparent

Add coriander powder, garam masala and Kashmiri chilli powder(We can use regular chilli powder too 

but use little less if you use regular chilli powder

Add grinded masala mix well and add  salt too. Mix well cook for 2 minutes. Later add the water and 

cook until masala gets thicken

When gravy gets thick add the mushroom and cashew. Mix well

Cook this for 2 to 3 minutes and add the 1 tsp ghee

Add chopped coriander and lemon juice too . Cook for 1 minute.

Mix well .Now the curry is ready

Serve it hot with Biryani or Naan. or Chapathi.

Aratikaya/Plantain Podi Koora

 Hai friends today I am coming with yummy and tasty curry 'Aratikaya Podi Koora". This is very simple and unique recipe. This can be prepared with or without onion. I made this curry in both ways. I loved it both ways. This curry goes nice with rasam rice and sambar rice. This we can add the tomato too. When i feel bore with some curries i love to change some ingredients and try new recipes. In the same way we can do Potato and Sweet Potato. Ok lets go the recipe









Ingredients:


Aratikayalu/Plantain-3

Salt to taste

Chilli powder to taste

Oil-1 to 2 tsp

Mustard seeds-1/2 tsp

Jeera-1/2 tsp

Urad dal-1 tsp

Chana dal-1 tsp

Dry red chilli pieces few

Curry Leaves few


Procedure:

Here are the raw bananas. Clean well with water and cut the ends.

Keep them in the water. Place the vessel on the stove and heat it

Boil the raw banana until the fork or knife insert.

Off the heat and take out from the water.

Make it cool and peel the skin. Grate it as shown here,

Here is grated raw banana.


Method:

Place the pan add oil and heat it. When oil gets heat add the urad dal and chana dal. When chana dal is 

light brown add the mustard seeds,jeera.dry red chilli pieces and curry leaves

add the salt and chili powder mix it immediately in low heat.

Soon add the grated  cooked plantain. Mix it well and off the heat

Now curry is ready

Ghugini(Bengali Street Style Chat)

 Hai friends today i am coming with yummy and tasty recipe called "Guggini".This is very tasty chat. This is best streetstyle chat. This is bengali dish. This is best street style chat. This recipe tastes yummy by adding simple masala. That masala is called Muri Masala/Bhaja Masala. This gives unique taste. Lets go to the recipe




Ingredients:

Yellow peas-1 cup

Onion Chopped-1 cup

Salt to taste

Green chillies-2

Mustard seeds-1/2 tsp

Jeera-1/2 tsp

Dry red chillies few

Garlic-1 clove

Ginger garlic paste 1 tsp

Oil-2 tsp

Sugar-1 tsp

Tomato chopped-1

Curry leaves few

Chopped coriander few


Coriander powder-1 tsp

jeera powder1 tsp

Turmeric1/2 tsp

Kashmiri red chilli powder-to taste


Bhaja Masala

Whole coriander seeds-1/2 tsp

Jeera-1 tsp

Saunf/Fennel Seeds-1 tsp

Elachi-2


Preparations:

First clean the dry peas well with water and add more water and soak for 4 to 5 hours.

After 5 hours drain the water and add the fresh water and salt.

Cook this in the Instant pot for 20 minutes or cook in the pressure cooker for 3 whistles.

Now the peas are cooked well. Keep this aside


Bhaja Masala

Take Corainder seeds, Jeera, Saunf and Elachi in a pan and dry roast in low heat.

When it roasted well. Make it cool down.

When it is cool down completely add in the mortor pestle and make it powder or grind them in the grinder.

Now keep this masala aside.


Masala Paste:

Mix coriander seeds powder,Jeera powder,Turmeric and Kashmiri Chilli powder in a bowl and mix it well.

To this add the water and make it a paste and keep it aside.


Crush or grind the green chillies and garlic make a paste.Keep this paste aside


Method:

Place the deep bottomed pan add oil and heat it.

Add the mustard seeds ,Jeera  ,dry red chillies  and fry it.

Add the chopped onions and curry leaves and fry till it turns to light brown.

When onions cooked well add the chilli garlic paste and ginger garlic paste fry for 1 minutes.

Now add the chopped tomatoes and fry till it get mushy.

Add the masala paste and water boil it

When it starts to boil add the cooked paste mix it well.

Add the salt and sugar too

Cover it and cook for 3 to 4 minutes

When it is cooked well add the bhaja masala and chopped coriander.

Now the Ghugini is ready to serve.

Serve with samosa,chopped tomatoes,chopped onions,nimki,sev,tamarind chutney,green chutney and lemon juice.

Now the chat is ready to have it.

This is the best and tasty chat ever.

Traditional Majjiga Pulusu


 Hai friends today i am coming with yummy and tasty recipe called "Majjiga  Pulusu".This is very easy tasty and comfort food .This we can do in different variations .This is one of the variation.This recipe i saw from the Vismai  Food channel. I really liked the dish and give a try .It came out so good.Ok lets go the recipe




Ingredients:

Curd/Yogurt-2 cups

Bottle gourd pieces -1 cup

Bendakayalu/Okra-1/2 cup

Green chillies-2 or 3

Tomato-1

Curry leaves few

Salt to taste

Turmeric little pinch

Oil-1 tsp

Tamarind juice-2 tsp

For grinding

----------------

Raw  Rice-2 tsp

Coriander seeds-2 tsp

Jeera-1 tsp

Mustard seeds-1/4 th tsp

Chana dal-1 tsp

Mustard seeds-1/2 tsp

Peppercorns-1/2 tsp

For seasoning

-----------------

Ghee-2 tsp

Mustard seeds-1/2 tsp

Jeera-1/2 tsp

Dry red chillies few

Curry Leaves-few

Hing little pinch

Preparation:

Take all the grinding stuff in the bowl add 1 cup water and soak it for 30 minutes.



After 30mminutes grind to smooth paste and keep it aside


Add this paste to the yogurt and mix it well without any lumps


Add little water too

Keep this aside


Method:


Take  thick deep bottomed pot and add 6 cups of water

Add the cut veggies ,chillies ,tomato pieces ,curry leaves ,2 tsp tamarind juice and salt one by one and make it boil.







It takes 10 minutes to boil



Now add the yogurt and masala mixed mixture to the cooked veggies

Add turmeric and salt too.


Cover it and cook for 20 minutes.

After that do seasoning

Place the small pan and add the ghee

To this add the mustard seeds,jeera,dry red chilli pieces ,curry leaves and hing.

Add the seasoning to the majjiga pulusu

Finally add the chopped coriander to the majjiga Pulusu

Now the Majjiga Pulusu is ready.

This tastes better when it soak for 2 to 3 hours.

Serve this with hot steamed rice

Sorakaya Curry/Bottle Gourd Curry

Hai friends today I am coming with yummy and tasty recipe "Sorakaya Curry".This is very simple ,tasty and easy curry.This curry is made with milk.This gives yummy taste,For extra flavour I added one spice powder that gives yummy taste to the curry.Ok lets go the recipe.



Ingredients:


Sorakaya-1(Small)
Onion-1
Green chillies-5
Garlic chopped-1 tsp
Mustard seeds-1/2 tsp
Jeera-1/2 tsp
Curry leaves -few
Turmeric-little pinch
Salt to taste
Milk-1/2 cup
Water-1/2 cup
Roasted Chana Dal Spice Powder-1 tsp
Oil-1 tsp

Preparations:


Peel the skin and cut into big chunks .Chop into small pieces using chopper


Method:

Place the pan add oil and heat it.Add the chopped garlic and fry


 When garlic is fried add the mustard seeds,jeera,curry leaves and green chillies
Add chopped onions and turmeric



 Mix it well and fry until the onions turns  transparant

 Add the chopped and cleaned  chopped sorakaya in the pan

 Mix it well

 Add salt and water cover and cook in low flame for 5 minutes




After 5 minutes add the milk and cook for 2 more minutes

 Now the sorakaya cooked well.

Finally add the spice powder and mix it well


.
 Mix it well

Serve this curry with Rice or Roti.
