Kakarakaya /Bittergourd/Karela Podi

 Hai friends today I am coming with yummy and tasty recipe called "Kakarakaya Podi".This is very unique recipe. This i saw in one group and give a try. It came out so good. This doesn't taste bitter. Even kids can eat too without any complaining. But this taste little spicy. If we enjoy spicy we will love it. This goes well with hot steamed rice. We enjoyed this podi with idly and dosa. Ok lets go the recipe




Ingredients:


Kakarakaya/Karela/Bitter gourd-1 lb(1/2 kg)

Ground nuts-2 tsp

Chana dal-2 tsp

Urad dal-2 tsp

Dhaniyalu/coriander seeds-2 tsp

Jeera-1 tsp

Sesame seeds/Nuvvulu-1 tsp

Tamarind-small lemon size

Salt to taste

Dry red chillies-10 to 12

Curry leaves-1 cup

Turmeric little

Oil-2 tsp


Preparations:


Clean well the bitter gourd and cut it into chunks.



Later add the chunks in the chopper(We can grate or we can grind to coarse podi)


Take the chopped kakarakaya in the bowl and add turmeric and salt


Mix it well



Cover the mixture and marinate this for 15 minutes.

After that take some and squeeze to come out water.


In the pan Add some oil and heat it. Add the chopped kakarakaya and fry in low heat till it comes crispy




It takes  30 minutes to fry

Make it cool and keep it aside.


Now in another pan add the ground nuts and fry in low heat



After some time add rest of the ingredients  and fry in low heat



Transfer in another plate

Now in same pan add the dry red chilies and fry it in low heat


After some time add the curry leaves  and fry in low heat


Transfer to the plate and make it cool


Now make it cool

Add the chillies nuts, dals,tamarind  and curry leaves in the blender.Blend to coarse powder


Add salt too

Blend it.




Now add the fried kakarakaya and blend to powder


Blend to powder.

Store in Dry jar.

Serve it with hot steamed rice

Chicken Ghee Roast

 Hai friends today i am coming with yummy and tasty recipe called "Chicken Ghee Roast". This we can prepare with mutton too. First when I heard ghee roast i was really surprised .Cooking chicken with ghee is interesting . When i tried the recipe we really enjoyed .This best side dish. Hope you all will love it. Ok lets go to the recipe




Ingredients:

Chicken-2 lbs
Onion-1(big)
Dry red chillies-7(Use can use acc to ur taste)
Coriander seeds-2 tsp
Jeera-1 tsp
Saunf/fennel seeds-1 tsp
Methi seeds-1/4th tsp
Peppercorns-1/2 tsp
Cloves-5
Salt to taste
Ghee-3 tsp
Lemon juice-3 tsp
Yogurt/curd-1 cup
Curry leaves few
Garlic-4 cloves

Preparation:

First place the pan and dry roast the red chillies and keep it aside


In the same pan add all the spices coriander, jeera, saunf, peppercorns ,cloves  





Roast in low flame.

Make it cool and now add roasted spices. dry red chillies and garlic in the jar along with required amount of water and blend it





Now take 1 cup yogurt in the mixing bowl and add the masala 



Add salt and lemon juice. Mix it well




Now add the chicken and mix it well.

Cover it and marinate for 1 hour.



Method:

Place the pan and add the ghee and heat it


When the ghee melts add the chopped onions and fry it.

Fry the onions till it turns to light brown

Now add the marinated chicken

Mix it well and.Cook this for 10 minutes
Now add the salt 
Cover it and cook for 15 minutes

Now open the lid and cook till the gravy gets thick
It takes 5 minutes 
Finally add the fresh curry leaves and mix it well
Fry for 1 more minute.

Now chicken is well cooked. Serve it hot as side dish
