Basundhi

Hai friends today i am coming with the recipe called "Basundhi".
Basundi is an Indian dessert mostly in Bihar, Maharashtra, Gujarat and Karnataka. It is a sweetened dense milk made by boiling milk on low heat until the milk is reduced by half.
Heavy cream may be added during the boiling process to hasten the thickening process. Once reduced, a little sugar, cardamom, Buchanania seeds also known as Charoli and/or saffron are added. Basundi is served chilled, often garnished with slices of almonds and pistachios.My husband love this sweet so on behalf of our anniversary i prepared this sweet.We are gng to enjoy the sweet tomorrow.I hope he love it.Ok lets go to the recipe.

Ingredients:

Milk-4 cups
Sweet condenced milk-1/2 cup
Sugar-1/2 cup
Elachi little pinch
Saffron few strings
Sliced Almonds- few

Method:

Place the thick deep bottomed pan and add the milk .
Boil the milk and when it starts to boil just low the heat .
Keep stirring constantly and reduce it till it becomes thick and the quantity of the milk is approximately half a litre.
Now add the condenced milk,sugar and the elachi powder and boil for another 10 minutes.
We can see some layers and take out from heat.
Now add the nuts and saffron and kepp it fridge.
Serve it chill.

Sesame Laddoo(Nuvvulu Unda) and Award time.

Hai friends today i am coming with the Nuvvulu Laddoo.Its very easy to prepare this method.Most of them prepare without making them powder they make laddoo with whole sesame seeds and make jaggery syrup.But i tried and i cant make laddoo so i decide to make powders and try we love it  and easy to prepare.Ok lets go to the recipe.

Ingredients:

Sesame-1 cup
Ground nuts-1/4 cup
Jaggery-1/2 cup

Method:

Dry roast the sesame seeds till it changes the colour to light brown.
Same as do the dry roast to peanuts till it changes the colour.
When it is little warm peel the skin and keep it aside.
Now grate the jagerry and keep it aside.
When the sesame seeds and groud nuts gets cool take them in the jar and blend it separately.
Now take both the blended sesame powder and ground nut powder and gratted jaggery in the jar and blend it.
Now we get little moist powder.
Now we take them in the bowl and make laddoos.
Now we can make laddoo with the blended mixture.
Serve it.

Note:If the mixture(sesame seeds powder and ground nut powder) is still little crumble we can add honey to get little smooth to make laddoo.

Mixed Vegetable Broken Wheat Upma

Hai friends today i am coming with the "Mixed Vegetable Broken Wheat Upma".This is nice for breakfast or Dinner.Its very healthy becausse we add the vegetables.Everybody going to love this and its one pot dish.Ok lets go to the recipe

Ingredients:

Broken Wheat-1 cup
Yellow Onion-1
Carrot-1
Corn-1/2 cup
Green Peas-1/2 cup
Tomatoes-2
Turmeric little pinch
Salt to taste
Water-4 cups

For seasoning
-----------------
Oil-2 tsp
Mustard seeds-1/2 tsp
Jeera-1/2 tsp
Curry leaves- few
Green chillies-6(Use acc to ur spice)
Ginger Choppes-1 tsp

Preparations:

Place the pan and add the broken and dry roast until it turns to light brown.
Mix it continously and it change to light brown and keep it aside.
Chop all the onions,carrot and the tomatoes.
Slit the green chillies.

Method:

Place the deep bottomed pan and heat it.
When it gets heat add the oil ,mustard seeds and the jeera.
When it pops add the green chillies ,ginger and the curry leaves.Fry this for 30 seconds.
Now add the chopped onions and turmeric fry this till it changes to golden brown.
When the onions change the colour add the chopped vegetables,carrot,peas ,corn and the tomatoes and cook for 10 minutes in low flame.
Then add the water ,salt mix it well and cover the lid and make it boil.
When it starts to boil slowly add the broken wheat stiring continously .
And cook this in low the heat till the wheat gets cooked.
Now its done.
Serve it hot with the Curd and pickle.
