Today i am coming with one of nice and best recipe called "Dalma".This is Orissa dish.This is famous dish in Orissa.This can prepared in two variations.Today i am coming with one variation.
This can prepared with or without onion garlic.
I heard this recipe from one of friend.I asked the recipe and then i searched for the recipe.I saw many recipes .My another friend is from Orissa she told how to cook with little changes.I tried that.It came out good.
This goes nice with rice and roti.Ok lets go to the recipe
Ingredients:
Winter melon- 1 big piece
Plantain-1
Brinjal-3
Broad beans-6
Taro root-2
Toor dal-1/2 cup
Chana dal-1/2 cup
Grated ginger-1 tsp
Grated coconut-2 tsp
Salt to taste
Turmeric-little pinch
Hing-little pinch
Water required to the curry
For Seasoning:
Oil-1 tsp
Mustard seeds-1/2 tsp
Jeera-1/2 tsp
Curry leaves -few
For Masala-1
Jeera-1/2 tsp
Dry red chillies-4
For Masala-2(Char Puthani)
Fenugreek/Methi seeds-1/4 tsp
Mustard Seeds-1/2 tsp
Jeera-1/2 tsp
Fennel Seeds-1/2 tsp
Preparations:
First peel the skin for the vegetables taro root,plantain and winter melon.Then cut them into little big chuncks.Cut the broad beans and brinjal into chuncks and clean well with water.
Now make the masalas to powders and keep it aside in different bowls as shown in the pic.
Method:
Take the pressure cooker and add the toor dal and chana dal clean well with water
.Drain the water and add the fresh water.To this add the vegetables ,grated ginger,turmeric,hing,salt and finally water.
Cover it and pressure cook this for 4 whistles.
Now off the heat .Wait until the pressure goes.In the mean time we have to do talimpu.
Take the small pan and heat it.To this add the oil mustard seeds and make it pop.Add the jeera,dry red chilli pieces and curry leaves.Keep it aside.
To this add the masala 1 and masala 2,grated coconut, and talimpu to this.
Serve it hot with rice or roti.
Note:For this recipe pumpkin is main.I don't have pumpkin so i used winter melon.
We can use ginger garlic paste and onions too.
