Peanut Jaggery Laddoo

Hai friends today i am coming with yummy tasty and healthy dish called "Peanut Jaggery Laddoo".
This is simple and easy to make.The taste is so good.We need only two ingredients.The two ingredients have good for health.I give this as dessert for my daughter lunch box.


Jaggery:

Jaggery is an unrefined sugar product made in Asia and Africa.
Jaggery is made by evaporating the water from sugar cane juice or palm sap. It is sold as a block, liquid or granules.
  • Gur: India.
  • Panela: Colombia.
  • Piloncillo: Mexico.
  • Tapa dulce: Costa Rica.
  • Namtan tanode: Thailand.
  • Gula Melaka: Malaysia.
  • Kokuto: Japan.
Jaggery contains more nutrients than refined sugar because of its molasses content.
Molasses is a nutritious by-product of the sugar making process, which is usually removed when making refined sugar.
Including the molasses adds a small amount of micronutrients to the final product.
Jaggery may also contain small amounts of B vitamins and minerals, including calcium, zinc, phosphorus and copper (4).
Jaggery may have a better nutrition profile than sugar, but it's still high in calories and is best consumed in moderation.

Peanuts:

Delicious, crunchy, and nutty peanuts are one of the popular oilseeds known to humankind since centuries. The kernels enriched with many noteworthy health-benefiting nutrients essential for optimum health and wellness. They are actually legumes but carry almost all the qualities of other popular edible nuts such as pistachioalmonds, etc.

Peanuts are rich in protein, fat, and various healthy nutrients. Studies show that peanuts may even be useful for weight loss and are linked to a reduced risk of heart disease.

Ingredients:

Peanuts-1 cup
Jaggery-1/2 cup

Preparations:

Place the pan and heat it,Dry roast the peanuts in low flame until light brown.




 When the peanuts are warm transfer them on the cloth .



Cover it and roll it so that the skin will comes off.

 Now place the peanuts on the  tray and tap it so that the peanut skins separate from nuts.


 Now place the nuts in the blender and blend it.

 Now add the jaggery and blend it again .
 Now place the mixture in the bowl.Take some amount of mixture and make it balls.




 Now the Peanut Jaggery Balls are ready to eat.

Raw Mango Coconut Chutney

Hai friends today i am coming with yummy recipe called"Raw Mango Coconut Chutney".This is very simple ,easy and tasty chutney.This chutney goes well with rice and dosa too.Even this is good for dip too.I enjoyed this with rice.If the mango is sour it tastes yummy.This can make without coconut too.I liked in both versions.Ok lets go to the recipe


Ingredients:

Mango pieces-1 cup
Fresh coconut-1/2 cup
Green chillies-5
Ginger -small piece
Curry leaves -few
Turmeric little
Salt to taste
Mustard seeds-1/2 tsp
Jeera-1/2 tsp
Urad dal-1 tsp
Dry red chilli pieces-few



 Method:

Place the add oil and heat it.When it gets heat add urad dal fry until light brown.


 When it starts to brown add the 1/4th spoon mustard seeds and jeera make it pop.

 Add the green chillies,ginger ,coconut pieces and turmeric.Mix it and off the heat,Make it cool.


 When it gets cool add the mango pieces and the mixture to the blender.To this add required amount of salt and water and blend it to smooth paste.




 Now the chutney paste is ready.

 Now take the same pan add the oil and do seasoning with the mustard seeds make it pop.Add the jeera,dry chillies curry leaves and hing.Add the seasoning to the chutney.Serve it with dosa or rice.
 Chutney is ready to serve.

Broken Wheat Mixed Vegetable Pongal(in insta pot)

Hai friends today i am coming with yummy tasty and easy recipe called "Broken Wheat mixed Veg Pongal"This is one of my favourite tiffin.This we can have it for Breakfast,Lunch or Dinner.I mostly prepare this in Dinner.This can be prepared on fasting days too.I mostly prepare this on pooja days.This is like one pot meal.Ok lets go the recipe

Broken wheat-1 cup
Moong Dal-3/4th cup
Chopped Carrot-1/2 cup
Green Peas-1/2 cup
Tomatoes chopped-1 cup
Green Chillies-6
Ginger chopped-1 tsp
Curry Leaves Few
Turmeric little pinch
Salt to taste
Mustard seeds-1/2 tsp
Jeera-1/2 tsp
Hing little pinch
Oil-2 tsp
Ghee-1 tsp
Water -8 cups(1 cup wheat  ravva we use 4 cups water
                         1 cup moong dal we can use 3 cups water
                          1 cup veggies we can use 2 cups water)

Method:

Today i am preparing in the instant pot.
Turn on the instapot and select saute mode.When it gets heat add oil.



When oil gets heat add the mustard seeds jeera and make it pop.Now add the green chillies,chopped ginger/curry leaves mix it and add hing to it.






Add the chopped carrot and green peas and mix it.




Add the chopped tomatoes and cook for 2 minutes.


Add the moong dal and mix it well.Later add the broken wheat and mix it well.



Fry for 2 minutes.Add the 8 cups of water ,salt and ghee mix it well.





Now turn on the porridge mode and cook it,

After 20 minutes when the pressure releases open it serve it hot.

Serve it hot with yogurt and pickle.


Note:

This we can do in the presurre cooker.All the procedure is same.We have to cook for 3 to 4 whistles/

Rice   -  This we can use rice instead of broken wheat.
Tomatoes   -  We can use or skip tomatoes.
Vegetables   -  We can use beans,cauliflower and brinjal too.
