Gongura Chicken(Chicken cooked in Sorrel leaves)

Hai friends today i am coming with the gongura chicken.This is one of Andhra famous curry.This is very yummy curry.Last time when i went to India i tried this curry my husband like this curry.So yesterday he asked to cook this curry soon i checked the recipe and yesterday i tried this curry for the first time.We love it.It came out good.Ok lets go to the recipe.

Ingredients:

Chicken-2 lbs
Onions-3(big)
Gongura Leaves(Sorrel leaves)paste-3/4 cup(I use the gongura paste)
Ginger garlic paste-2 tsp
Coriander and cumin powder-1 tsp
Garam masala-1/2 tsp
Chilli powder-1 tsp(use acc to ur taste)
Turmeric little pinch
Salt to taste
Oil-2 tsp(or u can use more)

For Marinate:

Chilli powder-1 tsp
Salt-1/2 tsp
Turmeric little pinch

Chicken Masala powder-

Elachi-3
Cloves-3
Cinnamon-1 small stick
Dry coconut powder-2 tsp

Preparations:

1.First clean the chicken and marinate it.
To marinate the chicken first add the chilli powder,salt and turmeric powder mix it well and kepp it aside for 30 minutes.
2.For chicken masala powder take the blender and add the elachi,cloves,cinnamon and dry coconut powder and blend to powder and keep it aside.

Method:

First place the pan and heat it.
When it gets heat add the chopped onions ,turmeric and fry this until the onions turns to light brown..
At this time we have to add the ginger garlic paste fry this  until  raw smell goes.
Now add marinated chicken cook this until chicken is cooked.
When the chicken is cooked add gongura paste and mix well cook this for 5 minutes.
To this add  chicken masala,garam masala,coriander cumin powder ,chilli powder little salt and mix well.
Mix well and add 1 cup water ,choppedd coriander and cover cook until the gravy thickens.
Now transfer this curry to serving bowl.
Serve hot this fried rice and roti.

Barley Onion Crackers

Hai friends today ia m coming with the onion crackers.This is also called as spicy onion biscuits.During googling i found this recipe but i made some changes in this recipe.I hope u guys love it.Lets go to the recipe.

Ingredients:

Barley -1 cup
Maida-1 cup
Sesame seeds-4 tsp
Onions(small)-2
Green Chillies-3 to 4(Acc to ur taste)
Baking soda-1 tsp
Butter-4 tsp
Oil-1/3 cup
Coriander leaves-handful
Salt o taste
Water-2 to 3 tsp

Method:

First chop the onions,coriander leaves and green chillies and keep it aside.
Take a wide bowl and add the maida,barley,baking soda,salt,sesame seeds whisk it well.
To this add the chopped onions,chopped green chillies and coriander mix it well and add the oil,butter and 3 tsp of water.(You should not add water at once mix and slowly add the water).
Mix it well like chapathi dough.Cover this with damp cloth and leave it aside for 30 minutes.
After 30 minutes take some portion of dough and roll it with rolling pin like chapathi.
Now take cookie cutter or any other sharp edges caps.
I use the oilspray for cut like cookies.I do it all the chapathi dough like as shown in the pic.
Now preheat the oven to 325F .Now place the aluminuim sheet and place the cookies side by side as shown in the pic.
Bake this for 30 minutes.(It varies from oven to oven)
TAke out from the oven and make it cool.Then store it in air tight box.
Serve this with evening tea time snack.

Note:
U can use completely 2 cups maida .I love to add the barley and oats .
U can use chilli powder instead of green chillies.
Bake it for 30 minutes some ovens may vary so bake it until it turns to brown.

Dussera Subhakankshalu and Paala Kakkaralu

Hai to all my bloggers Happy Dussera.I hope u all will success in all work.Ok lets got to the recipe This is a traditional recipe in my family.We prepare this on the ocassions or when the guests will come to our home.My mom prepares this very tastly.Thsi i prepare with my mom.Last year when i went to India she prepared this sweet.I forgot the fotos in my moms system.This this when i went to India i copiedd this photos.Here is the recipe.

Ingredients:

Rice flour-1 cup
Sugar-1/2 cup
Milk-1 cup
Water-1 cup
Salt little pinch
Oil-for deep frying
Ghee-3 tsp(to apply out hands )

For stuffing:
Grated coconut-1 cup
Grated paneer-1/2 cup
Sugar-1/4 cup
Little water.

Method:

First we have to prepare the stuffing
Place the pan and heat it when it gets heat add the gratedd cocont,sugar and little water and mix well untill the it forms like that the stuffing have to form like laddoo consistancy as i shown in the pic.This cooks for 10 minutes.After 10 minutes switch off the heat .
To this add the grated paneer and mix well make ladoos with this and keep it aside.


For Filling.

Take another pan and add the rice flour,sugar,milk,water and little pinch salt and mix well continously without any lumps.
This we have to mix continously until it forms like this paste when it forms thick paste we have to still mix until it separets from pan.
Tip:Put ur hands in water and then place the hand on the paste when the paste sticks to hand then the paste is not ready so we have to mix for 2 more minutes.When the paste dont stick to our hands then the paste is ready.

Now take both filling and stffing

Now apply ghee to the hands and take some portion of white stuffing and knead it well make it like a cup.

To this place the coconut paneer ball and cover the ball completely with the white stuffing and make like ladoo.
Now press this laddoos with ur pams and make like cutlets.Do all like this and keep it aside.
Now place the oil for deep frying.When the oil gets heat now slowly drop 2 or 3 cutlets in teh oil fry it until the cutlet floats on the oil.





When it floats turn to another side and cook for 1 more minute and take out from the oil and place on the paper to remove the excess oil.
Do all like this.
Now serve this with chicken curry.this tastes good with the chicken curry.
