Beetroot soup

Hai friends today i am coming with "Beetroot Soup".This is healthy and simple soup.This soup can be prepared with some more vegetables.Beetroot is the main vegetable.I am not a big fan of the beetroot but when i saw this recipe i really love it.I was so tempted to the colour of the soup.I really love the adding of the celery to the soup.Celery gives nice flavour to the soup.I cant eat raw but love it adding any soup.Give a try guys.
Beetroot is  a rich source of potent antioxidants and nutrients, including magnesium, sodium, potassium and vitamin C.
Beetroot juice has been shown to lower blood pressure and thus help prevent cardiovascular problems. Research published in the American Heart Association journal Hypertension showed drinking 500 ml of beetroot juice led to a reduction in blood pressure within one hour. The reduction was more pronounced after three to four hours, and was measurable up to 24 hours after drinking the juice

Ingredients:

Beetroot-2 cups
Celery-1/2 cup
Carrot-1/2 cup
Onion-1/2 cup
Chopped Garlic-1 tsp
Vegetable Bullion cubes-2
Milk-1cup
Salt to taste
Pepper 1/2 tsp
Butter-1 tsp

Preparations:

Clean the vegetables well with the water and drain the water.
Take the vegetables in the pressure cooker and add the water and cook for 2 whistles.
After the vegetables get cooked and keep it aside.
Drain the vegetables and keep the stock and cooked vegetables aside.
Grind the cooked vegetables to make puree.


Method:

Place the deep bottomed pan and heat it.
To this add the butter and make it melt.
Now add the  chopped garlic and pepper heat it.
To this add the vegetable bullion and make it cook.
Now add the vegetable stock and beetroot puree mix it well and make it boil.
When it starts to boil add the milk and mix it well and make it cook.
WHen it get cook add the salt mix it again.
Off the heat and serve it hot.
