Karaikudi Veg Fried Rice

Hai friends how r u all.Hope u are all doing well.I have been not posting recipes due to my health issue.Now i am recovering so few days back i started cooking.Now i will come with more recipes and organiazation.

Last month i tried this recipe in a resaurent i really love the rice and searched for the recipe.Then i came to know its traditional chettinad dish.I found the recipe and tried it.It is very tasty.This can prepare with chicken also.Instead of vegetables we can use chicken.Ok lets go to the recipe.


Basmathi rice-2 cups
Vegetables-Carrot,cabbage,Capsicum,Red and orange Peppers
Turmeric little
Garam masala-1 tsp,
Ginger garlic paste-2 tsp
Salt to taste
Oil-3 tsp
Curry leaves few
Coriander leaves handsful


Coconut-1/4 th cup
Dry red chillies-8
Curry leaves few
Fennel seeds-1/2 tsp
Coriander seeds-1 tsp


Wash all the vegetables and cut it like chunks as shown in the pic.

How to prepare the rice:

Wash the basmathi rice and drain the water.
Now take the rice bowl and add the rice and water and cook in the rice cooker.
It off automatically and now the rice is ready keep it aside.

How to prepare Masala:

Place the pan and heat it.When it gets heat add the oil now add the spices one by one .dry red chillies,pepper,coriander seeds,curry leaves,fennel seeds,masala spices and coconut.
Fry the spices in low flame.Keep this aside.

 In the same pan add the onions and fry until raw smell goes.
To this add the masalas and mix well.
Keep this aside and make it cool.
Blend to a smooth paste.


Take a wide pan and heat it.Add the oil .To this add the curry leaves and ginger garlic paste.Fry for 30 seconds.

 To this add the turmeric and garam masala and fry for 15 seconds.

 Add the Tomato chunks and fry until it comes like paste.

 Add the carrot,cabbage mix it well cover and cook for 2 minutes.

 When the carrots are half cooked add the capsicum chunks mix it well.Cook for 1 minute

 Now add the paste and mix it well.Cook for 2 minutes.Then vegetables must be little cruncy.
 Add the salt and cook for 1 more minute.

 To this add the cooked rice and mix it well.The masala should be coated well to the rice.

 Finally garnish with chopped coriander.
Serve it hot with raita


The vegetables should not over cook.
Instead of vegetables you can use chicken and shrimp too.
