Aapam


Hai friends today I am coming with yummy and tasty breakfast called "Aapam".This is very authentic breakfast to Kerala.This can be eaten in the breakfast.This is easy and healthy dish.This looks like lacy pancakes with crispy ends and fluffy at the middle.This can be served with many side dishes like chutney,kurma and coconut milk.I really love with coconut milk.I got this recipe from my neigbhour.This can be prepared in many ways.This can be prepared with yeast or without yeast..Today coming with yeast recipe.Ok lets go the recipe






Ingredients:

Raw Rice/Parboiled Rice/Sona Masoori-3 cups
Grated coconut-1 1/2 cup
Cooked rice-1 1/2 cup
Salt to taste
Sugar-3 tsps
Yeast-1/4 th tsp
Oil for frying
Water required

Preparations:


Take the rice in the bowl
 Add water and clean well with water.
 Drain the water
 Refill with fresh water and soak this for 4 hours or over night.


 Add the soaked rice,grated coconut,cooked rice,yeast sugar and water one by one





 Blend to smooth paste

 Pour the batter in the bowl
 Cover it and keep it aside for 6 hours.
 After 6 hours the batter got fermented.
 Add required amount of salt and water mix it well.


 The batter should be thin.

Method:


Place the Aapam pan and heat it.
 When it gets heat add the ladle full batter to the pan
 Spread the batter as shown in the pic and video too



 Add oil to the edges of the aapam
Cover with lid and cook for few seconds or the edges get crispy
 Remove the lid and gently take the aapam

 Serve it hot with chutney or kurma or cocnut milk






Note:

Rice:We can use Sonamasuri rice or parboiled rice

Yeast: Instead of yeast we can add ENO before making the Aapam.
