Gutti Vankaya

Hai bloggers today i am coming with everyone's famous curry "Gutti Vankaya" curry.It is Andhra's famous curry.In andhra everybody know the gutti vankaya curry.Everybody has there own style.For this curry we need fresh and small brinjal.Lets go for the recipe


Small brinjal-10
tamarind-half lemon size(optional)
ginger garlic paste-1 tsp
dhaniya-2 tsp
poppy seeds-2 tsp
whole spices(elachi,cloves,cinnamon)-3 to 4
chilli powder-1 to 2 tsp
salt-acc to ur taste
curry leaves-few
oil-4 tsp
coriander chopped-few

Method:Take a pan pour 1 tsp oiland heat it then add the whole spices,dhaniya seeds and poopy seeds fry until it changes the colour light brown . Now add the chopped onions and turmeric to it fry until it turns transparent.

Add the ginger garlic paste,chilli powder,salt and fry for 2 minutes.
Turn off the heat.Make it cool and grind it.
Take some paste from jar keep it aside for stuffing.
To the remaining paste in jar add the tamarind and grind it.

Now lets go to the brinjal.Take the brinjal clean it without the water.

Now take another pan and add 2 tsp of oil and place all the brinjals and fry it by adding little sugar.Low the heat and fry the brinjals on all sides by turning them. After all brinjals are cooked make it cool and stuff the paste to it.
Now take the pan pour some oil and add the remaining paste and little water and fry for 2 minutes then add the brinjals and curry leaves to it. Cook untill all the water goes.Finally add the chopped coriander. Serve hot with rice.This goes nice with rice and mudda pappu.
