Mango Avakaya

Hai guys today i am coming with andhra,s famous pickle mango avakaya.Everybody loves avakaya.Making the Avakaya has always been a tradition in my house, Amma always checked for an auspicious day ( I dont know why she did that ) and kick started spring by making a temporary pickle and then worked on the actual one.This we can do with different varities like

Aavakaaya
Thurum Maagaya (Maagaya with grated mango)
Bellam Aavakaaya (A sweet variant of Avakaya)
Allam Aavakaaya (A spicy variety including ginger-garlic paste)
Vellulli Aavakaaya (Aavakaaya with Garlic)

But today i am coming with the mango avakaya.


Ingredients:


unripe green mangoes pieces-4 cups
turmeric-1/2 tsp
oil-1 cup(acc to the pickle)
salt-1/2 cup
red chilli powder-1 cup
mustard powder-3/4 cup
fenu greek powder1 tsp
Jaggery-1 tsp

Method:First clean the mangoes cut into cubes and then clean with the dry cloth to absord the water or put under the sunlight. Meanwhile we can prepare the mustard powder and fenugreek powder, to make this powders we have dry roast the mustard and fenugreek seprately and grind them into powders.Now take the clean bowl without wet now add all the ingredients


Mix it well and add the half cup oil to it.

Now take this to clean jar without the wet.Transfer all the mixer to jar and add the remaining oil.
After mixing all the ingredients set this pickle aside covered in a safe place and let it marniate the pickle for 3 to 4 days so that the spice mixtures is well mixed with the mango pieces. After 3-4 days mix the pickle nicely and taste it and check weather salt is correct or not if u feel its less add some more to it(If salt is not enough the pickle will get spoiled very soon so we should see that the salt is perfect in this pickle. This pickle can be preserved for more than a year.

Note:Please dont put the wet spoon in the jar it may spoil the pickle.
