Capsicum and Sweet Corn Rice
Hai friends today I am coming with simple tastry and yummy rice "Capsicum and Sweet Corn Rice".This is very easy to prepare.This we can prepare without onions too.This we can try with different vegetables too.But this is nice combo.This we can eat directly without any side dish.Ok lets go to the recipe.
Ingredients:
Basmathi rice-2 cups
Capsicum-3
Sweet Corn-1 cup
Onion-1
Salt to taste
Curry leaves few
Turmeric powder little pinch
Oil-1 tsp
Mustard seeds-1/2 tsp
Jeera-1/2 tsp
Dry red chillies- few
Spice Powder Mix
Ground nuts-1/4 th cup
Chana dal-2 tsp
Toor dal-2 tsp
Moong dal-2 tsp
Urad dal-1 tsp
Dhaniya seeds-2 tsp
Jeera-1 tsp
Dry red chillies-7 to 8
Preparations:
Chop the onions and capsicum.
Place the pan and add the all the dals and ground nuts dry roast it.
When it turns little light add the dhaniya,jeera and dry red chillies.
Fry until the everything turns light brown.
Make it cool and blend to powder.
Keep this aside.
Rice:
Clean the rice well with water and cook the rice and keep it aside.
Method:
Place the pan add the oil and heat it.
When it gets heat add the mustard seeds,jeera,dry red chillies and curry leaves.
Add the chopped onions and turmeric.Mix it well.
Cook this until the onions turns to light brown.
To this add the capsicum and mix it .Cover this and cook for 5 minutes.
Now add the corn cook this for 2 to 3 minutes.
At this point add the salt and grinded powder mix well.
Add the rice and mix well the rice should be coated well with the powder.
Finally add the chopped coriander.
Serve it hot.
